Potatoes are a traditional food source and famous for their nutritional benefits as well as their wide range of applications. To get the most out of the vegetable as a natural source of protein, IQI’s partner Avebe developed a patented process with an additional step for purification and refining. The resulting product, ProtaSTAR®, has an even higher protein efficiency ratio (PER) than regular potato proteinequaling beef, pork, chicken breast, pollock, salmon in terms of digestibility and protein quality, and outperforming other concentrated plant protein sources such as soybean meal, pea, and corn.
